  • Professional bullfighter Oscar Higares guides a charging bull into a wall at the annual village festival of San Juan in Campos del Rio, near Murcia in southernSpain.  (Oscar Higares is featured in the book What I Eat: Around the World in 80 Diets.) After a dozen more passes, he kills the bull on his first attempt, eliciting a standing ovation from the crowd, which awards him the bull's ears and tail. Oscar and the bull spend just under 15 minutes together in the ring (an anxious period in which Oscar must control not only the objective dangers, but also his fear).  Each bullfight ends with the killing of the bull by the matador (bullfighter).MODEL RELEASED.

  • A family owned wineskin workshop in Pamplona, Spain. This old bota (wineskin) workshop called Botería San Fermin is operated by three brothers-Pedro, Victor, and Juan José Echarrí-the third generation of this family business. Their grandfather started the business 115 years ago. They've been in the present building 30 years and started learning the workmanship involved when they were young children. Originally the botería was in their home. They had three floors for living and one for the workshop. Victor is pictured. Process: They turn the stitched hide inside out, beat it on a machine to soften it (they used to have to do this by hand by beating it on a rock) and then put tar on the inside goat fur.   • The crumbling village of Gallipienzo, Spain is built on the side of a hill and is utterly charming. The houses are built of stone and mortar. The old mortar is crumbling and is patched in places. Several of the homes are newly renovated but the owners kept the original ideas of the houses in place, which is what is keeping the village charming. Navarra, Spain.

  • Thousands of wine barrels in the aging cellars of the ultra-contemporary Bodegas Campillo in Laguardia, Spain. They use stainless steel fermentation tanks but employs both modern and traditional methods in the winemaking process. Their aging barrels are both American and French oak. The bodegas' youngest wine is four years old. The winery maintains an area where buyers of quantities of the wine can store what they buy. Because of automation, there are only five fulltime employees running the extensive entire daily operation. Few year round workers are needed. La Rioja, Laguardia, Spain.
