School cafeteria staff would feed the charming Southerner at delivery stops, and he gained 100 pounds in one year. He earned a second degree in turf management, supervises a small crew of greenskeepers, and coaches high school football at Palisade High School.

Kibet Serem cares for a small tea plantation that his father planted on their property near Kericho, Kenya when Kibet was a young boy and he is responsible for milking the cows that his family owns. He is 25 years of age. He sells extra milk to a nearby school for a government feeding program and gives some to his mother who makes yogurt and sells it. His staple food is ugali, a maize meal porridge. He milks, feeds, waters and cares for the cows twice a day with the help of the wives of his brothers who also live on the property in their own houses.

  • Fresh dough, about to be baked in circular ovens, in Akbar Zareh's bakery in the province of Yazd, Iran. (Akbar Zareh is featured in the book What I Eat: Around the World in 80 Diets.)  The son of a baker, Zareh began working full-time at age 10 and regrets that he didn't attend school and learn how to read and write. By working 10 hours a day, every day of the week, he has sent his four children to school so they don't have to toil as hard as he does. The product of his daily labor is something to savor. His fresh, hot loaves are as mouthwatering and tasty as any in the world. After baking in the tandoor clay ovens, most of the rounds of fresh bread are dried and broken into bits.

  • Research on the human genome: Dr Peter Lichter, of Yale Medical School, using a light microscope to do fine mapping of long DNA fragments on human chromosomes using a technique known as non- radioactive in-situ hybridization. The chromosomes appear in red on the monitor screen, whilst the DNA fragments (called probes) appear yellow/green. Mapping chromosomes may be regarded as a physical survey of each chromosome to find the location of genes or other markers.   • Shashi Kanth, a call center worker, rides his motor scooter near his home on a weekend in Bangalore, India. (Shashi Kanth is featured in the book What I Eat: Around the World in 80 Diets.)  Like many of the thousands of call center workers in India, he relies on fast-food meals, candy bars, and coffee to sustain him through the long nights spent talking to Westerners about various technical questions and billing problems. He took a temporary detour into the call center world to pay medical and school bills but finds himself still there after two years, not knowing when or if he will return to his professional studies.

  • Kibet Serems' grandmother who lives near their farm by herself in a small house.  (Kibet Serem is featured in the book What I Eat: Around the World in 80 Diets.)  Kibet, who is 25 years old, cares for a small tea plantation that his father planted on their property near Kericho, Kenya when Kibet was a young boy and he is responsible for milking the cows that his family owns. He sells extra milk to a nearby school for a government feeding program and gives some to his mother who makes yogurt and sells it. His staple food is ugali, a maize meal porridge. He milks, feeds, waters and cares for the cows twice a day with the help of the wives of his brothers who also live on the property in their own houses.
