Joachim Rösch, a brewmaster at the Ganter Brewery in Freiburg im Breisgau, Germany conducts a routine check of the factory. He is 44 years of age; 6 feet, 2 inches tall; and 207 pounds. The brewery's main hall showcases old polished copper vats, but Ganter now also uses stainless steel tanks with computerized controls in a blend of traditional and modern beer making. Joachim's job requires him to taste beer a number of times during the week, and unlike in wine tasting, he can't just taste then spit it out: "Once you've got the bitter on the back of your tongue, you automatically get the swallow reflex, so down the chute you go," he says.
